2021 Santa Fe smart cruise control

So we just bought our first Hyundai and I can’t figure out how to disable the smart cruise control and just use regular old cruise control. Every other car I have ever owned that had smart or adaptive cruise control had a way to opt out of using it. I’ve tried every button on the console. What am I missing?!

I don't think you are missing anything. But why do you care?
You can of course "opt out" by simply not activating the system but I see no advantage to the traditional cruise control function over SCC.
The advantage is that unless you are really paying attention to the speed it is very easy to get behind another car and not even notice that your speed decreases slower than you would like.

2019 manual says the following:

To Convert to Cruise Control Mode
The driver may choose to switch to use the conventional Cruise Controlmode (speed only control function) by following these steps:
1. Push the CRUISE button on thesteering wheel to turn the systemon. The cruise indicator will illuminate.
2. Push and hold the Vehicle-to-Vehicle Distance button for more than 2 seconds.
3. Choose between "Smart CruiseControl" and "Cruise Control".

Hum? One of the reason Hyundai received the IIHS “Top Safety Pick+” was the adaptive cruise control.

Lane Keep Assist
Auto braking, keeping distance from front car,
Emergency braking assist, etc...

Why would you defeat these critical feature which prevent accidents, especially in urban driving???

The Smart-Adaptive Cruise Control is why your insurance rate is much lower in a Hyundai.

Why, defeat a function that reduce accidents caused by rear-ending, deviating from lane, etc..??

I already explained why I want to do it. It is annoying To get behind someone that is doing say 65 and you are doing 70. If you are not really watching...next thing you know you are doing 65 too because the system is so smooth sometimes you don't really notice the slowing down.

With regular cruise I know I am getting close to someone slower so it is time to move over and there is none of the slow down then accelerate...then slow down then accelerate of the adaptive cruise.

I don't mind it at all on anything other than freeway driving. In fact it can be quite handy to have it on if a car pulls out of a side road and does not get up to speed.

But for me on a freeway it is just a waste of gas as it is constantly slowing down and speeding up.

I understand the point about the vehicle slowing without noticing, but after using it for a bit I mostly got used to it and learned at what point the car would start slowing. In some ways it is annoying, because it over reacts and uses the brakes quite a lot, which will also show up later in greatly reduced brake life, not to mention it's probably annoying to people following. I just started turning mine off under certain situations, such as going downhill, as I do not want the system riding the brakes constantly. Overall, I think it's a good system, but does have some limitations that you just have to adapt to.

Adoptive cruise isn't any different than regular cruise maintaining constant speed gong down hill; the only difference is if there is a car in front of you.

Why defeat it? Because on my 2019 Santa Fe I put on the cruise and went to set it and it said the radar is blocked - no it was not blocked. Another couple of times I put on the cruise, set the speed and it immediately warned of a potential accident and applied the brakes, there was no one behind, or in front of me. If there had been it could have been catastrophic. Brought it to Hyundai, they tested it, said there were no codes and they could do nothing for me (suggested I don't use the cruise). Contacted Hyundai of America and waiting to see what they suggest.

I really don't understand why people can't just answer someone's question without all of the extra rhetoric. If you know how to disable it, great! If not, DON'T ANSWER! Geez. All the extra "opinions" do nothing to answer a question. I was really hoping someone could efficiently answer this question because I, too, would like to disable that function. If I have my cruise control set at a certain speed and someone cuts in front of me at a faster speed, my car is automatically going to slow down, which is actually not needed because the other car was already traveling faster.

I believe in my 2020 Santa Fe there was an option to either work as "smart' or "standard" cruise, never looked for in in my 2023 Santa Fe, never had a need as it does detect the car in front is moving faster and slow down is minimal.
