I need some help again with a part number.
What's the OE part # for REAR wheels hub/bearing, non-ABS (and with drum/disk combo brakes), for a 2000 Sonata V6 2.5L?
Is it something with 512191?

Ah, before you put the tires back, adjust the parking brake adjuster. Is not self-adjusting, you need to work it trough the hole covered with a rubber plug. 'Push' the star wheel with a flat screwdriver will tighten the parking brake.

They are still OK, no noises. But I didn't put a lot of miles on them, just some 5000.

Just ordered some rear hubs from rockauto for about $37 a piece. Never done bearings before. I'm assuming hub assemblies come ready to go, already packed with grease inside?

Yep, just bolt-on.

The service manual mentions "Using a spring balance, measure the wheel bearing starting torque" and "Fix a dial gauge and measure the hub end play. Check that it is within the standard value."

I'm assuming that those steps are only needed if you replace the bearing itself, not the entire hub?
