Winter is finally here and temperatures are hovering around -10celcius. Is it okay if I start the car and put the temperature control to AUTO high on heat and let it run for 5-10minutes before driving off?

Usually I have the remote start through bluelink start the engine first for the first 10 minutes w/o temperature control. Then after giving a little break to the engine I'll slowly up the temperature to not pressure the car too much.

Yes that's fine. The fan will not start to run until temperature builds enough to actually start heating the interior. When there's sufficient heat from the motor, then the fan speed picks up.
