Why did auto manufacturers switch from an ignition key to an ignition start button ?

Because it's a much more complex system with more potential points of failure, so more potential income when something inevitably goes wrong.

Would it be harder to steal without an ignition key ? Perhaps this is the reason or is it easier to steal now ? Maybe it's for the best because I rented a small Toyota and couldn't get the ignition key out of the car for some reason, lol
