I'm going to add wiring for another 12 Volt outlet in right rear area and also install a 110V "extension" cord to the right rear inside. I bought an Engel portable fridge and will power it from the SFS 12 Volt outlet in rear when driving but when camping I want to power it from the trailer battery and when fancy camping (with power) I'll use 110. The fridge switches automatically.

The fridge will live in the right back corner of the SFS as it's more convenient access. Besides, room is at a premium in our little trailer :)

The actual wiring I have figured out but I'm a bit hesitant about tearing the back of the SFS apart to run wiring down to the hitch area but tear apart I will because I don't want cables running out the trunk door. All else fails I plan to follow the trailer hitch wiring in the left rear corner but hope to actually install the additional 12 volt plug along the existing one.

Perhaps someone has done some "exploring" in that area and can share some possible "gotcha's" to look out for?

i've pulled out all the trim on the rear hatch but not on the inside of the "trunk."

stuff is fairly easy to do...I'd recommend using a set of poly trim tools that you can grab off of ebay for around $7.00 or so...

Thanks for the hint re the tools.
After cleaning the trunk area out and removing a corner piece underneath I found a route. Removed one rubber plug and was able to route wires in by the trunk cubby hole and then under the foamy to behind the rear seat. Turned out perfect. Didn't have to cut/drill anything. Very relieved :)
Now just the wiring up left to do.
