I found that the Cruise Control in my 2014 Sonata is calm and accelerates gently. Even up hills it doesn't rev like crazy.

However, my Sonata was in the shop for a few weeks back in August for the engine recall, and I got a new 2020 Elantra. The Cruise Control acted completely different. I couldn't use it uphill because it went down 2 or 3 gears and revved like crazy. I don't need that much power.

How jumpy are other Cruise Control systems? Does the 2021 Sonata rev high going uphill or is it more like mine?

I switch over to manual shifting when I use cruise control.
No drama that way.

My last 4 cars were stickshifts, so I'm accustomed to taking control when passing, climbing hills etc.
Even the "smartest" automatic can't read my mind and anticipate.

How speed control works is very dependent on the drivetrain in the vehicle. Any vehicle will require a downshift sometimes to maintain speed when going up a hill. My guess is the Elantra loaner has a smaller engine than your Sonata, so it is more likely to have to downshift to maintain speed going up a hill.
