from what I have read resetting the ECU is accomplished by removing the power supply for a short time. Will this also reset the ash and soot levels stored in the ECU, I have installed a new DPF AND THE INSRUCTIONS SAY THAT THE ASH AND SOOT LEVELS IN THE ecu SHOULD BE RESET.

No, that needs to be reset using specialist diagnostic equipment. Most decent independent garages will have the equipment to do it though so it's not necessarily something you need to visit the Hyundai dealer for.
