Has anyone tackled a spark plug change on the Entourage? I was wondering if there are good directions or tips from anyone on the removal of the intake manifold.

Not an easy job
check out www.hmaservice.com ..... this is a free website that allows you to view the entourage service manual.
Just follow the instruction on this site

You can get free Factory Shop manual here, http://www.myhyundaiforums.com That you can download on your PC that works nice!
You might have to ask a mod/admin to get the link. But I have gotten one there works very nice!

I dont know if you have tackled this job yet but.... I would do it for like $75. its not hard and I should have it done in about an hour. This is an everyday thing for me.
