Does anybody know if, it would be a problem of not running with an Air Flow sensor for a day or two..

No major distances say about 20 km or so.

Would I do any damage to the engine or should I stay under "X" in speed?

this is correct, it will be a slushbox to drive, and might damage the cat doe to over rich mixture.

Calalytic converters (the expensive anti-smog device in your exhaust) can be ruined if doused in unburnt fuel.........running without a MAF could do just that!.
