I was reading the sevice interval manual that came with my 08 Elantra and saw that the oil did not need to be changed for the first 7500 miles. Do Hyundai's require 7500 miles for the engine to break in or can I do what normaly do with a new car which is drive it easy for the first 1000 miles and then change the oil. After that drive the wheels off it and change the oil every 3000 miles.
My next question is: Do Hyundai's like mobil 1? I have always have go luck with mobil 1 oil and a K&N oil filter.

I don't think it's possible to change the oil too often. I would say your approach would be fine.
