Hi, wandered into the group due to a slow day at work. I've owned several of the original Excels covering all model years. The oil pressure sender is located on the front of the block, below the alternator. It was a common failure for the sender to go bad, and make the exact mess you have under your hood. I've even seen a few of these missing entirely due to deterioration.
Look at the block below and slightly "behind" the alternator, and you should see a single wire connected to a (probably very nasty looking) brass pressure switch. This will be the sender. I do not recall the size of the wrenches that this part requires for r&r, so keep several sizes handy. It's simply a matter of unscrewing the old one, disconnecting the wire, and then screwing in a new one.
Also, what trim level do you own? If you don't have a factory tach, you can easily install one in place of that huge and rather cheesey looking analog clock, or blank plate if yours is a base model. They simply bolt in and work without messing with any wiring.
If you don't have the digital clock in the top of the dash, they install just as easily. The plug for the clock is behind the blank plate.
I used to love messing around with the old carbed Excels. They may have been a bit cheesey as cars go, but they were easy to "personalize" using OEM parts.
